Asparagus Stuffed Chicken Breast

Ingredients

Chicken Breast with Asparagus
  • 200g chicken breast
  • 100g asparagus
  • 70g tomato sauce
  • 30g sun dried tomato
  • 40g Baladna mozzarella
  • 150g vegetable basmati rice


How it's made!

1. Lay the chicken breast on a cutting board and, using a sharp knife, cut a pocket into the thickest part of the chicken breast, being careful not to cut through the other side.

2. Season the inside of the chicken breast with salt and black pepper.

3. Stuff the chicken breast with asparagus, chopped sun-dried tomato, and grated Baladna mozzarella cheese.

4. Heat a pan over medium-high heat and add a drizzle of olive oil.

5. Sear the chicken breast on both sides until golden brown, about 3-4 minutes per side.

6. Reduce the heat to low and pour the tomato sauce over the top of the chicken breast.

7. Prepare the vegetable basmati rice.

8. Cover the pan with a lid and let it simmer for about 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

9. Serve the Asparagus Stuffed Chicken Breast hot with the vegetable basmati rice
